So I finally rebooted the PC and went into the UEFI - there was no auto option, but I noticed having the boot logo on gives a vendor (MSI) logo on the loader (including spinning cirle) that is the correct dimensions. It's only when I leave it off that the windows logo shows up and it all looks stretched.
